Paleo Brunch

Today  I went to a Paleo brunch. Food was good and all homemade. The blueberry muffins were a wonderful treat. Though no picture from the lunch, but we had eggs, bacon, veggies, goat cheese, avocado, and mini blueberry muffins. Those cookbooks have some super yummy recipes and I will check them out for sure.  But like I said before, I am totally for grain free as I can feel a difference, but I am not quite so sure about the very high fat content in some of the dishes.

Blueberry Muffins

2 cups almond flour
3 eggs
1/4 cup honey
1/2 tsp. baking soda
1 tbsp. apple cider vinegar
dash salt
1 tsp. vanilla extract
2 tbsp. coconut oil
1 cup blueberries

Blend all ingredients excluding blueberries. Once completely mixed fold in blueberries. Bake at 350°F for 25 minutes.

I tried the ProteinPow wraps. they are really quick to make and are very filling due to the psyllium husk. Worth a try in my book.

Today’s food prep was quick again. I made some Asian salads (lunches) and a kale quiche (breakfasts):
