It just occurred to me that Meal Prep Sundays may be a thing of the past very soon. Since I am moving to Hawaii and plan to work from home I would not need to prepare that extensively any longer. I still will be planning my meals but I may cook daily and that way I can vary my foods/meals better. And no more Aldi or Trader Joe hauls for sure since there are none of those on Oahu. Though there is at least a Costco! And I am looking forward to poke bowls, seaweed salads, fresh fish and local fruits.
I went to Aldi’s this morning and then started my meal prep later in the afternoon. Total for groceries was about $80 following RP Maintenance. My next cut is just around the corner and I am looking forward to it!
This week I made Sheet Pan Egg Whites from the RP cookbook, stuffed peppers with yogurt sauce, and kale salad with chicken sausage. For breakfast, I usually make protein pancakes or waffles. My bed-time snack is some yogurt with low sugar jam and mini choc chips. I got some carrots, cucumbers and mini peppers and hummus for snacking/to fill with extra veggies.
